Tis' the season for Turkey, stuffing, mashed potatoes and gravy, and LEFSA! Making lefsa has been a family tradition since way before I was born. We get together roll out the dough and make it on the grittle. It is one of my favorite things about this time of year.
Lefsa is made of potatoes and has a lot of flour in it. I learned that you shouldn't put the flour in it until you are about ready to roll it out though. This is because the dough sweats and then it becomes very sticky and that is never good.
Making the lefsa today were me, my mom, my grandma, my cousin Trevor and his fiance Shonda, my other cousin Kathleen, and Shonda's mom. There were three rollers, one of them being me, and three flippers, though there were four griddles going. I call that great multitasking there! In the end there was about about 11 dozen pieces of lefsa, wow what a lot of lefsa!
All I am going to conclude with is that I hope the lefsa is AMAZING!
